Chateau le Beaucastel WineTo celebrate the 100th birthday of Chateau de Beaucastel, Park Hyatt Saigon is delighted to welcome Pierre Perrin, owner of Perrin & Fils, and Chef Laurent Deconinck, chef de cuisine at Chateau de Beaucastel, to a food and wine galore event which will be held at the hotel from 3 to 5 November 2009. This three-day event will showcase a variety of activities, from a cooking class to a specially crafted seven-course dinner menu by Chef Deconinck. The range of activities will start with a cooking class at Square One Restaurant on 3 November 2009, followed by exclusive wine dinners on 4 and 5 November 2009. The dinner menus will be paired with exemplary wines, including Chateau de Beaucastel White 2007; Chateau de Beaucastel White Vieille Vigne 2007; Vacqueras Perrin & Fils “Les Christins” 2006; Chateau de Beaucastel Red 1998; Chateau de Beaucastel Red Homage a Jacque Perrin 1995; Chateau de Beaucastel Red 1989; and Perrin & Fils Vignerons since 1909.

Prices are VND1, 335,000++ (US$ 75++) per person for the cooking class and
VND1, 691,000++ (US$ 95++) per person for the exclusive dinner, including wine.

About Pierre Perrin, Winemaker

Pierre Perrin completed his baccalaureate in organics. At the age of 20, he was appointed the team head at worldwide vineyards, learning vine-grafting techniques at Saint-Raphael. In 1994, he gained even more experience at Tablas Creek and Chateau Romanin vineyards. A year later, he interned as winemaker for Ets JP Moueix in Libourne and began working at several of their chateaux in the Bordeaux region, including the esteemed Petrus. In 1996, he graduated from the University of Dijon with a degree in oenology.

About Laurent Deconinck, Chef de Cuisine

Chef Deconinck started his career in the world of gastronomy with Jean-Yves Joanie, the 1-Michelin-star chef of Le Cagnard. Two years later, he joined Jannu Gleise at the 1-Michelin-star La Bonne Etape. In 1995, Chef Laurent moved to England to join the team at Le Manoir aux Quat’ Saisons in Oxford to further his training with Raymond Blanc.

At the end of 1996, Chef Deconinck returned to Paris to join celebrity chef Alain Senderens at the 3-Michelin-star Lucas Carton, where he became chef de partie. After three years, he went on to Paris to work in the 3-Michelin-star Pierre Gagnaire and the 3-Michelin-star Michel Rostang restaurants.
